Golden Menu Unveiled
The 71st Annual Golden Globe Awards menu was revealed today at the Beverly Hilton Hotel. The press crammed into the Ballroom as Executive Chefs demonstrated the cuisine that was inspired by the tropics and which highlighted an explosion of variations of gold.
The appetizer is composed of three ‘compartments’ – a grilled eggplant with sun-dried tomatoes, pine nuts, and hummus on seared tomato; a mini sweet pepper with feta cheese, pomegranate, herb and California olive oil on grilled pita; and completing the trio – a grilled artichoke on multigrain tabbouleh and tahini. Executive Chef Suki Sugiura was inspired by a contemporary world influence while incorporating local Californian ingredients. The entree is created by Executive Sous Chef Chris O’Connell, combining fish and meat in an explosion of color and taste, while keeping to the themes of simple elegance and gold. Mediterranean spice crusted braised beef short rib and sautéed smoked filet of Atlantic trout – an unusual choice that mirrors salmon visually, but has a less oily taste. Both are topped with spinach, sweet corn ragout – the combo of green and yellow contrasting against the protein – and drizzled with a light cream of tomato dill sauce. Bringing it altogether is a romanesco, Campari and turnip polenta. The short ribs are braised for three and half hours so they hold form while melting in the mouth. All the vegetables are harvested in a 300 mile radius.
Dessert? Gusto Mango with Tropical Compote is an exotic mixture of sweet and tart, cream neutrals and intensity, arced with spires of chocolate. Pineapple and mango flavors rub up against vanilla, highlighted with blackberries.
Freshly brewed organic coffee and select herbal teas complete the meal. Moet & Chandon Grand Vintage 2004 will flow throughout the meal. Terrazas Reserva Chardonnay 2012 and Terrazas Reserva Malbec 2010 will round out the beverage choices.
The tables will reflect the international theme. Mark Held of Mark’s Garden will use a gorgeous mix of gold toned roses, yellow Cabana blooms from Kenya and rust colored calla lilies housed in a burnished metallic fabric creating a luxurious opulence worthy of the star studded gala.
